Tradition meets innovation – in conversation with GMSA

For our breads, we use high-quality AOP rye flour from Valais – produced by our long-standing partner, Groupe Minoteries SA (GMSA). The mill has moved to its new location in Riddes – in the heart of Valais, where modern technology meets traditional craftsmanship. For us as a bakery, this means flours with character – for breads with history.

From Naters to Lower Valais – why this step?

GMSA : The location in Naters was temporary and intended for residential use. In Riddes, we found ideal conditions—central, easily accessible, and close to the cultivated areas. Furthermore, the new mill with stone grinding allows us to process the grain particularly gently.

What makes AOP rye flour special?

GMSA : The rye is sustainably grown exclusively in Valais – without synthetic additives, under strict AOP guidelines. Starting in summer 2025, we will also gently mill it using traditional millstone grinding methods. This preserves a centuries-old breadmaking tradition.

Why do you focus on small batches?

GMSA : Our mill is flexible and designed for small batches. This allows us to tailor our flours to the individual needs of artisan bakeries. Our flours are natural, free from additives, and perfectly suited to specialty breads with character.

What does sustainability mean to you?

GMSA : Short transport routes, regional cooperation, and conscious use of resources. Part of our electricity comes from solar energy, and our flour remains natural – from the field to the bakery.

And what does your future look like?

GMSA : The demand for honest products is growing. With our new stone mill and together with 38 farmers and 38 bakeries, we stand for genuine quality from Valais. If you want good bread, you need real flour – that's what drives us.
