Every day, we bake fresh bread with great care and dedication – but not every loaf finds its owner immediately. But simply throwing it away? That's out of the question for us!
Food waste is one of the biggest problems of our time. In Switzerland, over 2.8 million tons of food end up in the trash every year, including large quantities of bread. Yet bread is a valuable product that requires a lot of manual labor, natural ingredients, and time. That's why we at Bäckerei Fuchs have a clear goal: No bread should go unused!
But what happens to the bread and rolls left over at the end of the day? The answer is simple – they get a second life with us.

From bread to a new product – how we use our leftovers wisely

Breadcrumbs instead of waste
We process unsold, low-fat white breads into the finest breadcrumbs. They are dried, crushed, and sieved. The result is a versatile ingredient that can be used in cooking and baking. Whether for breading schnitzel, as a thickener for minced meat, or as a crispy topping for gratins – our breadcrumbs are a true zero-waste product.
Rye bread becomes crispy chips
Our rye bread is turned into crispy rye chips – a savory snack that's perfect with cheese, dips, or simply on its own. The rye bread with walnuts is cut into thin slices and gently toasted in the oven. This simple yet ingenious idea gives our rye bread a second life while simultaneously offering a delicious and healthy alternative to conventional snacks.
Bread as animal feed for regional farmers
Even if it's no longer suitable for human consumption, it's still used – namely as high-quality animal feed. Regional farmers regularly collect our old bread free of charge and use it as supplementary feed for their animals. The farmers greatly appreciate this opportunity, as they receive natural and nutritious feed that benefits their cows, sheep, or chickens. The Hérens cows are given dried rye bread as concentrated feed before the stinging season. Thus, the cycle is complete – from fresh rye bread to concentrated feed for the strongest animals in Valais.
